Learn about the work University of New Hampshire College of Life Sciences and Agriculture (COLSA) researchers Sherman Bigornia and Maria Carlota Dao are doing to support the health of underrepresented communities in New Hampshire.
Bigornia, an assistant professor in the department of agriculture, nutrition, and food systems, has been working with N.H.’s Bhutanese refugee community, studying whether the federal government’s dietary guidelines, which are taught to people participating in the Supplemental Nutrition Assistance Program (SNAP), meet the communities’ unique nutritional needs. At the same time, Dao, who is also an assistant professor in the department of agriculture, nutrition and food systems, collected biomarker data from the study’s participants to establish the relationship between the foods they were eating and their gut microbiome health.
